Liven up simple rice by creating this easy rice pilaf.

Rice Pilaf with Peas and Cashews

1 cup long grain enriched rice
1/4 cup minced onion
2 teaspoons butter
2 cups chicken broth
1/4 teaspoon seasoned salt
1 (10-ounce) package frozen green peas
1/4 cup lightly salted roasted cashews
Fresh cilantro springs (optional)
  1. In a large skillet with a lid, saute rice and onion in the butter until onion is almost translucent. Add chicken broth and seasoned salt, bring to a boil, cover and simmer until rice is tender, about 12 to 15 minutes. Remove from heat. Stir in frozen peas and cashews, re-cover and let stand 10 minutes.
  2. Garnish with fresh cilantro sprigs, if desired.

Serves 6.
