
This simple, colorful side
dish of butter-coated and roasted sweet potato halves is sure
to please the whole family.
Roasted
Sweet Potatoes
- 6 sweet potatoes, fresh
1/4 cup butter, melted
Salt and pepper to taste
- Preheat oven to 375°F
(190°C).
- Wash sweet potatoes well,
removing any blemishes. Cut sweet potatoes in half, lengthwise.
Place potatoes on a baking sheet or roasting pan, coat with melted
butter and season with salt and pepper. Turn sweet potatoes onto
the cut side, leaving a little space between each piece. You
may need to divide them onto two baking sheets, depending on
the size of the sweet potatoes.
- Place sweet potatoes in
preheated oven and bake for 45 to 50 minutes, or until fork tender.
Makes 4 to 6 servings.
