
Here's a terrific way to fix kale! In this
easy recipe, kale is sautéed in olive oil with garlic
and a touch of red wine vinegar to make a beautiful and delicious
side dish.
Simple
Sauteed Kale
- 2 tablespoons olive oil
- 2 cloves garlic, finely
chopped
- 1 1/2 pounds kale, ribs
removed, leaves coarsely chopped (about 10 cups total)
- 1/2 cup water
- 1 tablespoon sherry or
red wine vinegar
- Salt and ground black
pepper to taste
- Heat oil in large saucepan
over medium heat. Add garlic; cook for 30 seconds or until fragrant.
Add kale and water; increase heat to medium-high and toss gently
to combine. Cover; cook for 5 minutes.
- Uncover and continue to
cook, stirring until all of liquid has evaporated. Stir in sherry;
season with salt and pepper.
