Southwest Corn Medley.

Here's a delicious side dish with a Southwest accent that your family is sure to love. Serve with your favorite Mexican entrée for the perfect accompaniment.

Southwest Corn Medley

1/4 cup butter or margarine
1 cup diced red bell pepper
3 cloves garlic, chopped
5 cups frozen corn, thawed
1 (4-ounce) can diced green chiles
1/4 cup chopped green onion
1/8 teaspoon hot pepper sauce
  1. Melt butter in large skillet. Add bell pepper and garlic; cook until tender. Add corn, chiles, green onions and hot pepper sauce; cover. Cook stirring occasionally for 5 minutes. Season with salt and ground black pepper.

Makes 8 servings.
