
Serve this elegant casserole with your
favorite grilled meat or fish, along with a side of seasoned
rice.
Spinach
Artichoke Bake
- 2 packages (12-ounce)
frozen spinach soufflé, defrosted*
2 tablespoons butter
1/2 cup chopped onion
1 (6.5-ounce) jar marinated artichoke hearts, drained
1/4 cup dry breadcrumbs
1/4 cup freshly grated Parmesan cheese
- Preheat oven to 350°F
(175°C).
- Cook onion in butter until
tender; add Spinach Soufflé and mix well. Place 1/2 spinach
mixture in 2-quart baking dish; top with artichoke hearts. Top
with remaining spinach mixture. Combine bread crumbs and cheese;
sprinkle over casserole.
- Bake for 25 to 35 minutes
or until set.
Makes 4 servings.
*Defrost in microwave on
50% power for 6 to 7 minutes.
