Spinach Mushroom Casserole.

Serve this easy casserole with roasted turkey or chicken and rice. Treat yourself to a slice of your favorite pie for dessert!

Spinach Mushroom Casserole

2 (12-ounce) packages frozen spinach soufflé, defrosted according to package directions
2 tablespoons butter
1 (4-ounce) can sliced mushrooms, drained
1/4 cup chopped onion
1/4 cup shredded cheddar cheese
  1. Preheat oven to 350°F (150°C).
  2. Melt butter in small skillet; add mushrooms and onion. Cook until golden brown. Combine Spinach Soufflé, mushrooms and onion in 1-quart baking dish; sprinkle with cheese.
  3. Bake for 35 to 40 minutes or until knife inserted near center comes out clean.

Makes 6 servings.
