Crispy, pan-fried yellow squash fritters
(pancakes).
Squash Fritters
- 1 (10-ounce) package frozen slice yellow
squash
- 2 large eggs, beaten
- 1/2 cup cracker crumbs
- 1/4 teaspoon pepper
- 1 small onion, finely chopped
- Vegetable oil
- Cook squash according to package directions;
drain and mash.
- Combine squash and next 4 ingredients.
- Pour oil to a depth of 2-inches in a deep-fat
fryer or heavy saucepan; heat to 375°F (190°C).
- Drop squash mixture by tablespoonfuls
into hot oil (do not crowd pan); fry until golden brown, turning
once. Drain on paper towels. Serve immediately.
Makes 10 fritters.
