Sweet 'Tater Packet Gratin

3 medium North Carolina sweet potatoes
2 ounces grated Gruyére or Jarlsberg cheese (1/2 cup)
1/2 cup thinly sliced Vidalia onion or sweet onion
1 tablespoon minced garlic
1 tablespoon olive oil
Salt and ground black pepper to taste
Heavy duty aluminum foil
- For Each Portion: Tear off aluminum foil into a 12-inch square piece. Line with a similar sized piece of parchment.
- Peel sweet potatoes and cut into 1/4-inch slices. Arrange 3 to 4 slices per packet. Sprinkle each with grated cheese, onion and garlic
- Drizzle a little olive oil over top and season with salt and pepper. Fold, seal and grill until done.
