Rich and cheesy potatoes will hit the spot and compliment almost any of your favorite entrées. This dish is great for using up any leftover cooked potatoes.

Welsh Rarebit Potato Casserole

1 (11-ounce) package STOUFFER'S® Welsh Rarebit, defrosted according to package directions
2 cups sour cream
1/4 cup butter or margarine, melted
1/3 cup chopped onion
6 medium potatoes, cooked, peeled and sliced
1/2 cup buttered bread crumbs
  1. Preheat oven to 350°F. grease 2-quart baking dish.
  2. Combine welsh rarebit, sour cream, onion and butter in a medium bowl.
  3. Layer welsh rarebit mixture and potatoes in prepared casserole dish. Top with breadcrumbs.
  4. Bake for 40 to 45 minutes or until hot and bubbly.
