This easy cheesy, creamed
spinach casserole with Parmesan cheese is sure to be a hit with
your guests and family.

Parmesan Spinach Casserole
- 2 (10-ounce) packages
frozen, chopped spinach
2 large eggs, well-beaten
2 tablespoons butter, softened
2 tablespoons cracker crumbs
1/2 cup cottage cheese
1/4 cup (1 ounce) grated Wisconsin Parmesan cheese
Salt and pepper to taste
- Defrost spinach; blend with the remaining
ingredients. Pour into a buttered 1 1/2 quart casserole.
- Bake at 350°F (175°C) for 30 minutes,
or until firm.
