Looking for something different in side dish casseroles? Try this mashed carrot dish seasoned with pepato cheese (a hard cheese similar to asiago or Romano cheese, but studded with cracked black peppercorns) and horseradish.

Wisconsin Pepato and Carrot Bake

3 cups cooked, mashed carrots
3 large eggs, lightly beaten
2 cups milk
1 1/4 cups (4 ounces) shredded pepato cheese
1 cup bread crumbs
2 tablespoons unsalted butter, melted
Salt, to taste
1 teaspoon prepared horseradish
1/4 cup chives, finely chopped
  1. Preheat the oven to 350°F (175°C).
  2. Coat a 9 x 9-inch baking pan with cooking spray. Set aside.
  3. In a large bowl, combine the ingredients. Transfer to the pan.
  4. Bake for about 30 minutes, or until a knife inserted in the center comes out clean.

Makes 8 servings.
