A deliciously creamy cauliflower and Swiss cheese side dish casserole with a buttery bread crumb topping.

Wisconsin Swiss Cheesy Cauliflower

1 large head cauliflower
3 cups (12 ounces) shredded Wisconsin Swiss cheese
1 1/2 cups half-and-half
3 egg yolks, beaten
1/4 teaspoon nutmeg
1/4 teaspoon pepper
1/4 cup butter, melted
1/2 cup bread crumbs
  1. Rinse cauliflower. Separate into florets. Steam just until tender. Place cauliflower in buttered 8 inch square baking dish.
  2. Stir together cheese, Half-and-half, egg yolks, nutmeg and pepper until well blended. Pour over cauliflower.
  3. Mix together butter and bread crumbs. Sprinkle over cauliflower.
  4. Bake at 350°F (175°C) for 20 to 25 minutes.

Makes 6 servings.
