Cooked green beans tossed with sautéed
red onion and sliced mushrooms in Italian dressing, and topped
with fresh chopped tomatoes and freshly grated Parmesan cheese.
Zesty Italian Green
Beans
- 1 1/2 pounds Italian green beans, fresh,
frozen or canned (or regular green beans)
1 small red onion, thinly sliced
3/4 cup mushrooms, thinly sliced
1/2 to 3/4 cup Italian dressing
1 cup fresh tomatoes, seeded and chopped
Parmesan cheese, freshly grated (optional)
- Prepare and cook beans.
- Mix onion, mushrooms, and dressing with
beans. Cook over medium heat until onion is tender, about 3 minutes.
- Top with tomatoes. Sprinkle on a little
Parmesan cheese, if desired.
