
This tasty casserole is an easy way to
use up some of the abundance of fresh zucchini from your garden.
Zucchini
Corn Casserole
- 2 packages frozen corn
soufflé, defrosted according to package directions
1 pound zucchini, cut into 1/2-inch chunks
1/3 cup chopped onion
1 cup stuffing crumbs
- Preheat oven to 350°F
(175°C).
- Combine corn soufflé,
zucchini and onion in medium bowl; pour into 1-quart baking dish.
Top with stuffing crumbs.
- Bake for 50 to 60 minutes,
or until knife inserted near center comes out clean.
