Zucchini Corn Casserole

Zucchini Corn CasseroleThis tasty casserole is an easy way to use up some of the abundance of fresh zucchini from your garden.

Recipe Ingredients:

2 packages STOUFFER'S Corn Soufflé, defrosted according to package directions
1 pound zucchini, cut into 1/2-inch chunks
1/3 cup chopped onion
1 cup stuffing crumbs

Cooking Directions:

  1. Preheat oven to 350°F (175°C).
  2. Combine corn soufflé, zucchini and onion in medium bowl; pour into 1-quart baking dish. Top with stuffing crumbs.
  3. Bake for 50 to 60 minutes, or until knife inserted near center comes out clean.

Makes 6 servings.
