Chicken and Broccoli Soup with Cheese Tortellini
An entrée-worthy soup that's full of gently poached chicken, cheese-filled pasta and vegetables.
3 (14.5-ounce) cans chicken broth
2 cups diced fresh boneless, skinless chicken breasts
1 onion, chopped
1 cup water
1/2 cup sliced carrots
2 tablespoons chopped fresh flat-leaf parsley
1 teaspoon lemon pepper seasoning
1/2 teaspoon crushed dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon salt
1 bay leaf
1 (10-ounce) package frozen broccoli
8 ounces BUITONI® Three Cheese Tortellini
- In a large pot, combine chicken broth, diced chicken, onion, water, carrots, parsley, lemon pepper, oregano, garlic powder, salt and bay leaf. Bring to a boil, reduce heat and gently simmer for 15 minutes, or until chicken is cooked.
- Add broccoli and pasta and simmer for 12 more minutes, or until pasta is cooked. Serve warm.
