Cream of Zucchini Soup

3 tablespoons minced onions
2 tablespoons butter or margarine
2 cups chicken broth
1 teaspoon curry powder
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 1/2 pounds sliced zucchini
1 (8-ounce) container sour cream
  1. In a medium saucepan saute minced onion in butter until tender. Add chicken broth, curry, salt, and pepper. Bring to a boil; reduce heat. Add sliced zucchini; cover and simmer until the zucchini is tender about 5 minutes. Stir in sour cream. Pour into a food processor or blender and process until smooth. Cover; serve chilled.
