Creamy Broccoli Soup
Cream cheese makes this easy broccoli soup extra creamy.
1/4 cup chopped onion
1 tablespoon butter or margarine
2 cups milk
1 (8-ounce) package cream cheese, diced
3/4 pound processed cheese spread, diced
1 (10-ounce) package frozen chopped broccoli
1/4 teaspoon ground nutmeg
1/8 teaspoon ground black pepper
- In a saucepan cook chopped onion in butter until tender.
- Add milk and diced cream cheese. Stir over medium heat until the cream cheese is melted, stirring constantly.
- Stir in diced processed cheese spread, chopped frozen broccoli, nutmeg, and pepper. Heat through.
Makes 8 servings.
