German Potato Soup
"This creamy potato soup is great to warm you during a cold winters' day." Recipe submitted by Carm Johnson.
6 cups russet potatoes, peeled and diced
3/4 cup chopped green onions
1/3 cup shredded carrots
1/4 cup minced celery
1 pint heavy whipping cream
3 tablespoons chicken base
1/4 pound butter
- Boil potatoes, carrots, green onions and celery until potatoes are fork tender, about 15 minutes. Then add cream, soup base and butter. Stir until soup becomes very creamy.
- Season to taste with salt and cracked black pepper.
Makes 8 servings.
