A hearty, economical and
satisfying ground beef and vegetable chili-flavored soup with
noodles.
Hearty Beef
Vegetable Soup with Noodles
- 1 pound ground beef
- 8 cups water
1 (14-ounce) can tomato sauce, prepared
2 onions, chopped
1 (16-ounce) package loose-pack frozen mixed vegetables
1 tablespoon dried oregano
1 tablespoon chili powder
- 2 teaspoons salt
1/2 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
1 1/2 tablespoons olive oil
1 1/2 cups uncooked noodles
Freshly grated Parmesan cheese for accompaniment
- In a large kettle over medium-high heat,
brown ground beef, drain.
- Add water and the next 9 ingredients.
Bring to a boil, reduce heat and simmer, partially covered, for
30 minutes.
- Stir noodles into the soup mixture and
heat on low for another 12 to 14 minute or until noodles are
tender. Serve with grated Parmesan cheese.
Makes 8 servings.
