Hot Vegetable Sipper

1/2 pound broccoli, chopped
2 carrots, peeled chopped
1 celery rib, sliced
1 potato, peeled and chopped
1 onion, chopped
1 tablespoon olive oil
1 teaspoon vegetable, chicken or beef base or bouillon granules
1/8 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon garlic powder
5 cups water - divided use

  1. Saute chopped broccoli, chopped carrots, sliced celery rib, chopped potato, and chopped onion in oil in a saucepan for 10 minutes. Add vegetable base, salt, pepper, garlic powder, and 3 cups water. Simmer, covered, for 15 to 20 minutes, or until the vegetables are tender. Pour into a blender and process until smooth. Add remaining 2 cups water and heat to serving temperature.

Makes 6 servings.
