A delicious and hearty smoked sausage and cannellini bean soup with tomatoes and pasta.

Italian Smoked Sausage Bean Soup

1 pound link smoked sausage, sliced
1 cup chopped onion
2 teaspoons olive oil
1 (28-ounce) can whole tomatoes, chopped
3 1/2 cups hot water
1 cup cooked curly pasta
2 teaspoons chicken base or bouillon granules
1 (15-ounce) can cannellini (white) beans, drained and rinsed

  1. In a stockpot over medium-high heat, brown sausage and onions in olive oil for about 5 minutes. Add tomatoes (undrained), hot water, curly pasta and chicken base. Bring to a boil then add kidney beans. Reduce the heat, cover, and simmer until the pasta is tender, about 15 minutes. Serve hot.

Makes 6 servings.
