A very flavorful treat, perfect for summer brunches.
Minted Strawberry Soup
- 1 cup fresh strawberries, stems removed
1 cup buttermilk
3 tablespoons mint jelly
2 teaspoons granulated sugar
2 fresh mint leaves (optional)
- Place strawberries, buttermilk, jelly and sugar in food processor or blender; cover. Process until smooth. Refrigerate for 1 hour before serving. Garnish with mint.
Makes 4 servings.
