Velvety smooth soup of sweet nectarines, puréed with sour cream and a buttery white wine, will start any meal in style.
2 cups peeled, pitted and sliced nectarines
1/2 cup sour cream
1/2 cup dry white wine, such as Sauvignon blanc
1/4 cup fresh mint leaves
- Combine nectarines, sour cream and red wine in blender and process until smooth. Garnish with mint leaves to serve.
- If refrigerated, soup may need to be re-blended prior to serving.
Makes 2 servings.
