A quick and easy purée of green pea soup with a hint of nutmeg.

Quick Pea Soup

2 tablespoons butter or margarine
2 celery ribs, chopped
2 garlic cloves, crushed
1 onion, chopped
2 cups vegetable consomme
1 (16-ounce) package frozen peas
1/8 teaspoon white pepper
1/2 cup milk
1/8 teaspoon ground nutmeg

  1. In a kettle, melt butter. Add chopped celery ribs, crushed garlic cloves, and chopped onion. Saute until softened, about 5 minutes.
  2. Add vegetable consomme, frozen peas, and white pepper. Cover and simmer for 5 minutes. Pour mixture into a food processor or blender and puree.
  3. Return the mixture to the kettle; add milk and nutmeg. Heat through, about 5 minutes, stirring constantly.

Makes 4 servings.
