A luscious purée
of fresh peaches seasoned perfectly with sugar, lemon and sour
cream with just a hint of cinnamon. Makes a refreshing starter
or ending course for a spring or summer meal.

Peach Soup
- 2 cups coarsely chopped
peaches
1/3 cup granulated sugar
1/4 cup lemon juice
1/8 teaspoon ground cinnamon
1 cup water
3/4 cup dairy sour cream
- Place peaches, sugar,
lemon juice and cinnamon in blender container or food processor
work bowl. Cover and process until smooth.
- Add water and sour cream;
blend until smooth. Serve.
Makes 5 servings.
Variation: Omit sugar.
Substitute 1 (29-ounce) can peaches in heavy syrup for fresh
peaches. Drain peaches, reserving syrup. Add 1/2 cup syrup with
peaches. Reduce water to 1/2 cup.
