Sweet Potato and Kale Soup

1/2 cup chicken broth
1 1/2 cups chopped onions
3 cups chopped kale
3 cups peeled and diced sweet potatoes
1 cup diced cooked turkey
4 1/2 cups chicken broth
8 ounces Muenster cheese, sliced
  1. In a kettle, heat chicken broth and chopped onion; simmer, covered, for 5 minutes.
  2. Add chopped kale, diced sweet potatoes, diced turkey, and chicken broth; return to a simmer and cook 35 to 40 minutes, or until the kale and potatoes are tender.
  3. Serve with sliced muenster cheese.

Makes 8 servings.
