Texas Tortilla Soup
- 1 pound ground beef
1/4 cup onion, chopped
1 (16-ounce) can whole tomatoes
1 (8-ounce) can tomato sauce
1 (15-ounce) can corn
1 (15-ounce) can kidney beans
1 package taco seasoning mix
4 cups tortilla chips
Shredded cheddar cheese
Sliced black olives
Sour cream
- Brown ground beef; drain. Add chopped onions and cook 3 more minutes. Stir in whole tomatoes, tomato sauce, canned corn (drained), kidney beans (drained), and taco seasoning mix. Simmer, uncovered, for 15 minutes.
- Serve over tortilla chips and garnish with shredded cheddar cheese, sliced black olives, and sour cream.
Makes 4 servings.
