This light vegetable and turkey sausage stew is a good entrée for a later summer's meal.

Vegetable Medley Stew with Turkey Sausage

6 roma tomates, seeded coarsely chopped
3 medium Yukon Gold potatoes, scrubbed and cut into 1-inch cubes
2 zucchini, cut into 1-inch rounds
1 medium onion, peeled and sliced
1 green bell pepper, seeded and cut into strips
1 cup chicken broth
1 teaspoon salt
1/2 teaspoon ground black pepper
1 pound Italian turkey sausage links, casings removed, crumbled
1/4 cup freshly grated Parmesan cheese
3 tablespoons chopped fresh flat-leaf parsley
  1. In a large pot, combine tomatoes, potatoes, zucchini, onion, bell pepper, broth, salt and pepper. Sprinkle sausage over the top and cover. Bring to a boil, reduce heat and simmer for 40 to 50 minutes, stirring occasionally, until vegetables are cooked to desired softness. Serve garnished with Parmesan cheese and parsley.

Makes 6 servings.
