Refreshing white wine gazpacho
with tomatoes, bell pepper, onion, garlic and fresh lemon juice,
served chilled topped with thinly sliced green onion.

Wine Gazpacho
1 green bell pepper, seeded
and diced
4 tomatoes, seeded and chopped
1 onion, chopped
3 garlic cloves, crushed
3 cups water
1/4 cup dry white wine
3 teaspoons fresh lemon juice
1 to 2 green onions, thinly sliced
- In a blender or food processor, puree
diced green bell pepper, chopped tomatoes, chopped onion, crushed
garlic cloves, water, white wine, and lemon juice. Strain, discarding
any large solids. Chill overnight.
- Serve in chilled bowls with sliced green
onion sprinkled on top.
Makes 4 servings.
