White Wine Gazpacho

No recipe image available.Refreshing white wine gazpacho with tomatoes, bell pepper, onion, garlic and fresh lemon juice, served topped with thinly sliced green onion.

Recipe Ingredients:

1 green bell pepper, seeded and diced
4 tomatoes, seeded and chopped
1 onion, chopped
3 garlic cloves, crushed
3 cups water
1/4 cup dry white wine
3 teaspoons fresh lemon juice
1 to 2 green onions, thinly sliced

Cooking Directions:

  1. In a blender or food processor, purée diced green bell pepper, chopped tomatoes, chopped onion, crushed garlic cloves, water, white wine, and lemon juice. Strain, discarding any large solids. Chill overnight.
  2. Serve in chilled bowls with sliced green onion sprinkled on top.

Makes 4 servings.
