Chipotle Citrus Marinade for Turkey Kebabs
Chipotle chiles add a nice smokiness to this peppery citrus marinade.
1 package Honeysuckle White Turkey Breast Tenderloins, cut into 1 1/2-inch pieces
1 tablespoon purple onion, minced
1/4 cup red bell pepper, chopped
1 tablespoon garlic, minced
1 tablespoon jalapeño, chopped
2 to 4 chipotle peppers
1/2 cup brown mustard
1/2 cup honey
1/2 cup cider vinegar
1/4 cup brown sugar, packed
1 lemon, juice and zest
1 lime, juice and zest
1 orange, juice and zest
1/2 cup cilantro leaves
- Combine marinade ingredients in a food processor and pulse until mixed. Divide sauce in half for marinade and basting/dipping sauce.
- Marinate chunks of turkey for 1 hour.
- Thread turkey chunks onto skewers (3 to 4 chunks per skewer).
- Grill on each side for about 7 minutes or until internal temperature reaches 170°F (80°C).
