Turkey and Rice Quiche
This is a versatile dish, offering a savory way to prepare cooked (or leftover) turkey.
3 cups cooked rice
3 cups diced cooked turkey or chicken
1 tomato, seeded and diced
1/4 cup sliced green onion
1/4 cup diced green bell pepper
1 teaspoon dried basil leaves, crushed
1/2 teaspoon seasoned salt
1/8 teaspoon cayenne pepper
1/2 cup milk
3 large eggs, beaten
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
- Preheat oven to 350°F (175°C). Lightly spray an 11x7x2-inch baking dish with vegetable cooking spray; set aside.. Combine rice, turkey, tomato, green onion, green bell pepper, basil, seasoned salt, cayenne pepper, milk and beaten eggs in a large bowl; mix thoroughly.
- Pour into prepared baking dish; bake for about 25 minutes or until center is nearly set.
- Remove from oven, sprinkle with cheddar cheese and mozzarella cheese. Return to oven and bake an additional 2 minutes or until cheese is melted.
- Allow to sit about 5 minutes before serving.
