Turkey Kabobs

No recipe image available.Grilled skewers of turkey tenderloin, nectarines, zucchini and onion basted with a honeyed soy sauce.

Recipe Ingredients:

1 pound boneless turkey tenderloins, cubed
4 nectarines, thickly sliced
2 zucchini, sliced into chunks
1 onion, quartered
1/4 cup soy sauce
3 tablespoons vegetable oil
2 tablespoons honey
1/2 teaspoon ground ginger

Cooking Directions:

  1. Alternate cubed turkey, sliced nectarines, zucchini chunks, and quartered onion on 8 metal or bamboo skewers. (Soak bamboo skewers in water for 30 minutes to prevent burning.)
  2. In a small bowl mix soy sauce, oil, honey, and ginger.
  3. Brush the soy sauce mixture on the skewered ingredients and place on a barbecue rack 3 to 4-inch above medium-hot coals. Grill about 5 minutes. Turn and grill 5 minutes longer or just until the turkey is cooked. Brush with the sauce while grilling.

Makes 4 (2 kabob) servings.
