Quick Pork Fajitas.

Put out on the table with a variety of condiments like sour cream, different salsas and guacamole and let the family create their fajitas to their own tastes.

Quick Pork Fajitas

1 pork tenderloin, about a pound, thinly sliced*
2 to 3 tablespoons fajita seasoning or marinade (or see recipe for
Fajita Seasoning Mix)
1/2 onion, sliced
1/2 green pepper, sliced
4 to 6 flour tortillas, warmed
  1. In a shallow bowl, toss pork pieces with fajita seasoning.
  2. In large non-stick skillet over medium-high heat, stir-fry pork pieces with onion and green pepper until all is just tender.
  3. Wrap portions in flour tortillas with salsa.

Makes 4 servings.

*Placing pork tenderloin in freezer for about 20 minutes makes slicing easier.
